After harvesting the olives, the oil is extracted by grinding the fruit in a home oil press for a few hours at room temperature. The result is a pure oil “en rama” that retains all of its organoleptic characteristics.
Olivar de la Luna is a very fruity oil with hints of olive, notes of other fruits like apples and almonds, and nuances of freshly cut grass. In the mouth it is long, soft and sweet, leaving a slightly bitter taste on the palate representative of the fruit it comes from, an indicator of its stability, wealth of polyphenols and antioxidants, and high vitamin E content.
